  • 3ml avocado oil
  • 1 onion
  • 1 bag Quorn – Mince
  • 1 tbsp chicken style stock powder
  • 1/2 pack taco seasoning
  • 1 tbsp Sweet Paprika
  • 1/2 red sweet pepper, finely chopped
  • 2 cans Ardmona Crushed Tomatoes
  • 1/2 cup grated zucinni
  • spring of fresh coriander
  • 1 cup water

Total time: 30 minutes. Serves: 4

Method: Heat oil in a frying pan, dice onion and cook till slightly browned.  Add the frozen quorn mince, taco seasoning, chicken stock & paprika and cook through.

Add zucinni and red pepper and stir through the quorn, add crushed tomatoes and water and let simmer for 10-15 minutes. Stir through some chopped coriander saving some for garnish.
